Lately, I’ve been thinking…
how too often we rush the things that shouldn’t be rushed.
“As soon as ____, then…”
We say things like, “as soon as they grow out of this phase, “as soon as we get to the next chapter”, “as soon as things change at the job”, then we’ll finally enjoy ourselves or this season or this stage or the job.
We went to a cousin’s wedding in Michigan last week and had some extra time to spend the morning of the wedding (and yes— Michigan summer was dreamy!). I did what any mom would do and went full ChatGPT research mode on what a mom of 3 here for one day on a beautiful summer day in Michigan should spend the morning doing. What topped the list? A school farm.
For a second I almost talked myself out of it — they're too old for a farm, right? But something made me go anyway. We hopped in the car and drove to the farm with both excitement and complaints filling the air. I paid our entry hearing background murmur about what a waste of money this was going to be.
BUT…guess what?
Everyone absolutely loved it. We spent the whole morning there — and I mean the whole morning.
Even in a world that's loud and fast and screen-lit, they're still kids. And that day, so was I.
Don't rush to the next chapter.
Don’t rush this chapter.

what I’ve been returning to lately
Being barefoot first thing in the morning. Walking out the back door to let the dog out first thing in the morning with bare feet.

Family-favorite meal right now
Mix a good squeeze of honey, few shakes of chili powder, few tablespoons of coconut aminos, ½ freshly squeezed lemon, teaspoon of rice vinegar, splash of sesame oil, and freshly grated ginger in a bowl.
Marinate salmon face down (skin-side up) for 15 minutes to 1 hour.
On a parchment-lined sheet pan, spread fresh green beans and broccolini on 2/3 of the pan. Drizzle with avocado oil, salt, pepper & garlic powder. Massage veggies to coat in the spices and oil. Place the salmon on the remaining 1/3 skin down and pour remaining marinade on top of salmon. Broil on top rack until veggies are cooked and salmon reaches 135 degrees (about 10-12ish minutes).
Add rice to your dinner bowl and make it look pretty with all your broiled goodness.
